Salad Recipe

Ingredients:

  • 2 cups mixed greens (spinach, arugula, or your favorite mix)
  • 1 cup cooked shredded chicken breast (store-bought rotisserie chicken works well)
  • 1 avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup cucumber, diced
  • 2 tbsp feta cheese, crumbled (optional)
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions:

  1. Prepare the Salad:
    • In a large bowl, combine the mixed greens, shredded chicken, avocado, cherry tomatoes, red onion, and cucumber.
  2. Make the Dressing:
    • In a small bowl, whisk together the olive oil and balsamic vinegar.
    • Season with salt and pepper to taste.
  3. Combine:
    • Drizzle the dressing over the salad and toss to combine.
    • Sprinkle feta cheese on top, if using.
  4. Serve:
    • Serve immediately.
